Shredded Pork Burritos they would kill me if I told ya

SHREDDED PORK BURRITOS by YUM IS WHY and doggito is not just a hotdog in a tortilla..

This recipe will serve 10 to 12 people. You can freeze the cooked pork leftovers if you've made too much, so go ahead and make it all.
A crockpot works best so you can go about your day and not tend to the stove.

Ingredients:

5 lb. pork loin roast -boneless is easier
1 large sweet onion
garlic (real or the store bought chopped garlic in a jar) - use as much or little as you like
salt, pepper
Olive oil
Green Salsa Verde (store bought - I usually use LaVictoria brand)

Later you will need tortillas, grated cheese, cilantro, sour cream and assorted salsas for serving & eating...

How To:
Cut up the loin as you would for stew. Dry it off in small batches with a paper towel (so you don't boil it) and brown it small batches in some olive oil. Large batches tend to make too much moisture and you don't get it brown.

Cut up and carmelize the onion separately.

Place the browned meat in a very large crockpot, adding garlic, salt and pepper as you layer more and more meat in the pot. Add 1 jar of the green salsa. Add the onion.

Cook on low for 7 to 9 hours or high for 4 hours and low for 4 hours. Shred with two forks and serve. ENJOY.

The Fighter movie

I just returned from the theater.  Saw "The Fighter" starring Mark Wahlberg, Christian Bale, and Amy Adams,  I loved it because I survived it.  Fights are great but make me squirm.  It's a movie -based on a true story- about an aspiring boxer -- Irish Micky Ward-- from Lowell, Massachusetts with the ugliest sisters on earth. He works to overcome his family dynamics and other Rockyisms in order to beat the crap out of his opponents.
Go see it.

FACE FATS

Well... checking the scale for obesity today and see ! Oh My Lookie Here!  a fatness, which I will blame on the holidays, but I know I need to act now:  Stop snacking, stop second portions, stop the nonsense and stolen bites of this and that.
So away I go, leaving this extra fat for anyone who might need it.

Now Tuesday...

A very fine day.  Shopped for art supplies, wine and cat food, using gift cards whenever possible.  Lovely.  I feel a little spent (ha-ha-ha-ha-ha-ha-ha-ha aren't I funny?) but I am home trying to learn what RSS feed is and how it can serve me.  
If it can peel me a grape, I'm all for it.

Yipes. Almost a new year!

What a great year I had in 2010 unless the next 3 days are really crappy...  I'm glad that I'm able to be home and paint and enjoy my life now.  Artful deeds are now my mainstay and I love it.  I am looking forward to more great successes in 2011.  If my house would simply clean itself, that would be another piece of the paradise.

I go to the airport today to hug and kiss Fiance` -- a surprise welcome home.

I had better rise up from the sofa now.  I have abused it all morning long.

Had a Blast today!

I fell down on the ice like so:  Walking, thinking, daydreaming, smiling, and then Whoa!!! One leg slips out in front of me and I'm sitting on the icy ground like a cow carrying a book heading to the health club.  Whoa!!  Not hurt, but embarASSed and a little cold due to the sit-down in snow.
This will wake you up in the morning.  This is a New Years OMEN!  "If you fall down just get right back up and look behind you and keep going, no matter who saw it."

After Christmas Day

Hi'ya.  So the day after Christmas is not as bloatie and floatie as Christmas night, and I'm relieved to wake to a new day.  It snowed through-out the holiday and it is perfectly white and OK today.  I will not go out to return gifts.  I am hoping to go out and snuggle up with a book at a coffee shop or unpopular restaurant.  


I SEEK UNPOPULAR PLACES TODAY WHERE QUIET might be the very best thing.  The goal is Great Silent Fun in the atmosphere of Shut Up and Let Me Read.  And think.

And if you can read this blog, quit meowing at me.

YIPEE AND HI HO YUM!

Thank goodness it is Christmas eve and not just a lot of prep for a standard Friday in December.
  I will make lasagna tomorrow for Christmas dinner.  With sausage.  With basil. Emphasizing the red/green thing.  I will buy Barolo vino today for the goodie wine and some other wine like a cheap Barbera to follow the good one.  It is the economy and value in wine -- buy one good pricey one and follow it later with a different cheapie.  It makes the holiday last longer.

OK then, lads and lassoos:  Let us give thanks and party like it is 2010.

I am painting!

With great zeal and vigor, I AM PAINTING!   Acrylic paint, bunch of textured paper and here I am totally excited and involved with canvas and fun.  This is the ART fun that I promised myself and here it is - so simple and wonderful.  I ask everyone to please get an idea and just go for it. Otherwise you will wait for Fun and it won't bother coming to you.  Fun loves you but has no legs. 
So, I go now -- relaxing in the world of accomplishment and divine splendor.

Yummy Wicked Salad I saw on TV

I got a great yummy recipe for a weird salad:  Grapefruit and orange slices on a plate (yes: peel the skin off the fruit and set on a plate.)  Sprinkle chopped red onion, chopped chives and chopped basil on top of the fruit.  Drizzle balsamic vinegar followed by a quick drizzle of virgin olive oil. 

YESSS!  It sounds awful.  It is spectacular.

How to lose weight quickly and forever

Are you almost too fat for yourself?  I was but I'm not any more, and it has been several years. 

Here's how:

1.  Stop snacking.  No more candy, chips, and for that matter anything so called "healthy" in your little mind.  Your little snacking mind creates more fatness than you know.

2.  Learn how to count calories.  Calories are calories are calories.  Like money in your checking account -- you only have so many calories to spend each day.  Your lifestyle and body structure determines how many calories you really burn, and you need less if you are on a mission to lose weight. 

3.  Record your calories as you would for a checking account.  Example:  I have 1200 calories to spend today:  100 yogurt; 85 grapefruit.  600 Big Mac.  200 3 oz. fish in butter, 150 small potato, 100 lite sour cream.    Oops -- cut back before the last bite...

4.  Exercise lightly.  It is ridiculous to force yourself into extreme excercise as if it were punishment.  Walk, ride your bike, lift weights -- for your own health, but NOT for the anorexic pursuit of thinness. 

5. Weigh yourself today and everyday, in the morning, before you eat.  Do not attach your emotions to the scale:  simply read the gauge and write it down on your calendar if it changes.  Think nothing of it. Only think of your goal. 

Your mind will follow your new approach.
